Lazy Day Chili


Lazy Day Chili

Makes about 4 servings
Ingredients:

1 lb. ground beef
2 large onions, chopped
6 cloves garlic, minced
2 jalapeño peppers, seeded and finely chopped (if you like your chili extra spicy you can throw in some seeds)
2 tablespoons chili powder
2 teaspoons ground cumin
1 large can of stewed tomatoes
3 cans kidney beans, rinsed and drained
Cheddar cheese, sour cream, and chopped red onion for toppings

Directions:

In Dutch oven brown beef over medium heat.  Add onions, garlic, and peppers and cook about 5 minutes.  Add chili powder, cumin, salt and pepper to taste and cook about 1 minute.  Add canned tomatoes and about 1 cup of water, bring to a boil.  Reduce heat and simmer, covered, about 10 minutes. 

Add the beans and return to a simmer.  Cook about 30 minutes to an hour (the longer the better).  Remove from the heat, pour into bowls, and top with your favorite toppings.
